Though we’ve hardly had a spring, today feels like summer. It’s hot and humid, which can make cooking less fun. With the temperature hitting 90 degrees today, the thought of turning the stove on, much less the oven, is not enticing. So I turn to my old favorite Delitefully Mexican© recipes that are simple to prepare, nutritious, and refreshing. Best of all, they require no ingredients that you can’t find in your local supermarket. They’re all on my website, so I’ll just add the links to them:
The Ensalada de Camaron pictured above is always a crowd-pleaser.

Above is my favorite go to appetizer when unexpected company arrives or I’m in a hurry, Hearts of Palm Dip
A new favorite is Spicy Pineapple Salad
Another good option is this delicious Tomatillo-Avocado Sauce (Salsa verde con aguacate) to eat as is or by mixing in cubes of queso blanco or small boconccini of mozzarella.
There are many such recipes on my site. You just have to look around. Let me know if you have any questions.
