Chipotle Spice Powder

- 10-12 dried chipotle or morita chiles
- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- ½ teaspoon black peppercorns
- 1 teaspoon Mexican oregano
Preheat oven to 300˚F
Wipe the chiles clean with a damp paper towel. Spread on a baking sheet and toast in the oven until hard and brittle but not burned. Remove the tops and seeds and crumble into a bowl. Set aside.
Toast the coriander, cumin, and black peppercorns in a small dry pan over medium heat until fragrant. Add the oregano and heat for 30 seconds. Let cool slightly and grind with the chiles to a powder in a spice grinder. You will need to do this in batches.
