French Toast Custard Baked Martine Inn

This is not the least caloric French toast you will ever have but it is definitely worth it.

Ingredients
  

  • 10 eggs
  • 2 cups sugar
  • 2 tablespoons vanilla extract
  • 4 cups half-and-half
  • Softened butter
  • 10 slices raisin bread
  • Confectioner’s sugar
  • Fresh berries
  • Fresh mint

Instructions
 

  • Preheat oven to 375°F.
  • Place eggs in the large bowl of your electric mixer and beat until thick and a light lemon color. Add sugar and vanilla and beat until thoroughly incorporated. With the machine running on low speed, add the half-and-half in a thin stream until incorporated.
  • Butter the bread and place half, buttered side down, in 13- X 9-inch Pyrex dish. Ladle enough egg-cream mixture to just cover the bread. Arrange the remaining bread, buttered side up on top and ladle remaining custard mixture over until ½-inch from the rim.
  • Bake, uncovered, for 45 minutes or until knife inserted in center pulls out clean.
  • Let rest for 10 minutes.
  • Cut into 8 pieces. Place each serving on plate; dust with confectioner’s sugar and sprinkle with fresh berries. Berry or maple syrup definitely optional.
