Ingredients
  

  • 6 pounds lamb bones
  • 10 cloves garlic peeled
  • 5 bay leaves
  • 10 whole allspice berries
  • 5 dried avocado leaves
  • 1 cup adobo chile colorado
  • 6 quarts water
  • Salt and coarsely ground pepper to taste

Instructions
 

  • Bake bones for 30 minutes.
  • Place baked bones in boiling water.
  • Add all other ingredients.
  • Cook for 2 hours on slow flame.
  • Cool and strain.
