Oven-roasted Cauliflower

I haven’t left my apartment in 21 days and cooking almost every day. That is, except for take out night to support the restaurant business. I go for easy, healthful recipes like this.

Ingredients
  

  • 1 head cauliflower
  • 2 cloves garlic
  • ¼ cup cilantro leaves
  • ¼ cup parsley
  • ½ cup Parmesan cheese
  • ¼ cup olive oil

Instructions
 

  • Preheat the oven to 350°F.
  • Carefully remove the outer leaves of the cauliflower. With a small, sharp knife remove the tough core taking care to not cut through. The cauliflower must stay in one piece.
  • Place the garlic, cilantro, and parsley in the food processor and process until smooth. Add the Parmesan and swirl to incorporate. Add the olive oil a little at a time. Cover the cauliflower with the paste and place in a small Dutch oven. Cover and bake for about 40 minutes.
