Hoja Santa Purée (Puré de hoja santa)
This is not a traditional Mexican basic but it is the base for several dishes I make and will soon post. You can substitute cilantro or Italian parsley for the hoja santa.
Ingredients
- 1 teaspoon salt
- 1-2 cloves garlic peeled
- 1 jalapeño chile coarsely chopped
- 3 large hoja santa leaves torn into pieces
- ½ cup extra-virgin olive oil
Instructions
- Place the salt and garlic in food processor and process until ground.
- Add the chile and process until well combined
- Add the hoja santa, a little at a time, and process until puréed.
- Add the olive oil in a thin stream.
