Pomegranate Salsa/Salad

Pico de Gallo de Granada was the name given by the Reforma newspaper in Mexico City to this wonderfully fresh and lively salad. (In the north of Mexico and in some parts of the US, pico de gallo refers to a table salsa, but in central Mexico it is the name for fresh fruit salad.) I could kick myself for not posting it before. At the restaurant we served it with grilled fish but yesterday I accompanied it with crunchy quesadillas with just a hint of cheese

Ingredients
  

  • cups pomegranate seeds
  • cups sliced radishes
  • 1 cup watercress leaves
  • 1 jalapeño chile finely chopped
  • 2 avocados diced
  • Juice of 1-2 limes
  • Salt to taste

Instructions
 

  • Place ¼ cup pomegranate seeds in a bowl and crush with a pestle to release the juice. Add the remaining ingredients, stirring well to incorporate.
