Zarela Pastry Chef, Ed Bonuso’s, Chocolate Glaze

I like to top Manu’s Flourless Chocolate Cake with Eddie’s delicious glaze. Of course, his version would be perfect but I don’t have a cake rack and the chocolate makes a puddle instead of being perfectly smooth like Eddie made it.

Ingredients
  

  • 9 ounces bittersweet chocolate
  • tablespoons unsalted butter room temperature cut into small cubes
  • cup heavy cream
  • tablespoons corn syrup

Instructions
 

  • Combine chocolate and butter in a small bowl.
  • Bring heavy cream and corn syrup to a boil in a small saucepan over medium heat, stirring often.
  • Pour heavy cream mixture over chocolate, let stand 1 minute, then stir until melted and smooth; let cool to room temperature.
  • Place cake on a rack and pour glaze over cake. Let glaze set in a cool room. Cake can be refrigerated; bring to room temperature to serve.
