Variation: Peel a large jicama and cut into fine julienne or dice. After slicing chicken, toss jicama in Chipotle Vinaigrette and lift out with slotted spoon, letting the dressing drain back into the bowl. Arrange jicama in center of serving plates. Continue with recipe, arranging sliced chicken on top of the jicama.
