Sea Bass Ceviche with Tangerine and Mango by Lesterloon Sanchez
I must confess that I am not partial to ceviches made with fruit and any other juice except lime juice but Lesterloon made a believer out of me.This is a simple, light, refreshing, and delicious dish. Original Spanish recipe is in the notes section.

- ¾ pound sea bass or black bass cut into ¼-inch dice
- 1 tablespoon kosher salt
- Juice of 4 tangerines
- 1 small red onion finely diced
- 1 ripe, firm mango cut into ¼-inch pieces
- 3 medium-size tomatoes peeled, seeded, and diced
- 1 Hass or Fuerte avocado cut into ¼-inch dice
- 4 tablespoons chopped cilantro
- 1 fresh serrano or jalapeño chile finely chopped
- 2 tablespoons extra-virgin olive oil
- Sea salt and freshly ground black pepper
Ceviche blanco con mango y mandarina
Ingredientes:
• 300 g de filete de robalo en cubos • 100 g de cebolla morada picada.• 1 cda. De sal de grano.. • El jugo de 4 mandarinas • 1 mango pelado y en cubos. • 3 jitomates en cubos. • 1 aguacate en cubos. • 4 cdas. De cilantro picado. • 1 chile serrano picado. • 2 cdas. De aceite de oliva. • Flor de sal de Colima o sal rosada de Veracruz. • Pimienta negra. • Tostadas.
Procedimiento: Colocar en un tazón el robalo, la cebolla y sal de grano. Añadir el jugo de las mandarinas. Refrigerar por una hora y media. Agregar al pescado el jitomate, aguacate, chile, cilantro y aceite de oliva. Terminar con la flor de sal y pimienta recién molida.
