Zucchini Cakes with Green Onions, Cheese, and Herbs
This is another dish that I would include in a meal if I were trying to seduce a man. You can see the entire menu in ”My Seduction Meal” and try its seductive powers for yourself!

- 1½ pounds zucchini coarsely grated
- Salt
- 1 recipe Aytun’s Vinegar Sauce
- 5 scallions chopped
- ½ cup chopped cilantro
- ⅓ cup chopped fresh parsley
- 2 tablespoons grated onion
- ⅓ cup grated parmesan cheese
- 3 eggs lightly beaten
- 3 tablespoons flour
- Freshly ground black pepper
- ½ cup light olive oil or peanut oil for frying
For Aytun's Vinegar Sauce
- 2 garlic cloves
- 1-2 tablespoons hot chile paste
- 1 cup good quality distilled white vinegar
- ⅓ cup chopped fresh cilantro
Sprinkle zucchini with salt and allow to sit in a colander for at least 20 minutes.
While the zucchini is draining, make Aytun’s Vinegar Sauce. Purée the garlic in the food processor; add the remaining ingredients and process until combined. Set aside.
Squeeze the zucchini dry and mix in a bowl with the remaining ingredients except the oil and Aytun’s Vinegar Sauce. Season with salt and pepper.
Heat the oil in a nonstick frying pan. Drop mixture into the hot oil by tablespoons and cook until golden brown on both sides. Drain on paper towels
Transfer the zucchini cakes to a platter and sprinkle Aytun’s Vinegar Sauce over them.
