This is a good dressing to experiment with. It would be great with a grilled duck salad or any green salad.

Ingredients
  

  • ½ cup red wine vinegar
  • 1 teaspoon garlic minced
  • 1 teaspoon Mexican oregano crumbled
  • 3 chipotle chiles en adobo minced (or use fewer for milder flavor)
  • 1½ cups olive oil extra virgin

Instructions
 

  • In medium bowl, whisk together the vinegar, garlic, oregano, chipotle chiles, salt, and pepper. Add olive oil a little at a time, whisking well after each addition.
